Micro-Meatballs

Average - Do Ahead

Ingredients:
1 1/2 lb. Laura's lean ground beef
1/4 cup egg substitute
1 tbsp. onion powder
1/2 cup seasoned bread crumbs
1/4 cup nonfat beef broth
1/4 cup water
1 1/2 cups chili sauce
3/4 cup grape jelly
2 tbsp. lemon juice

Directions:
Combine ground beef, egg substitute, onion powder, bread crumbs, beef broth, and water in bowl and mix until ingredients are blended. Combine chili sauce, grape jelly and lemon juice in deep microwave-safe casserole (3-quart) and mix well. Shape meat mixture into meatballs and place in sauce. Microwave on High 10-12 minutes; stir meatballs and cook 8-10 minutes until sauce is bubbly and meatballs are cooked through. Serve immediately. Great appetizer or served over rice or couscous.
