Baked Halibut on Spinach Leaves

Easy

Ingredients:
1 lb. halibut fillets
2 (10-oz.) pkgs. fresh spinach leaves
11/2 cups tropical salsa

Directions:
Preheat oven to 450 F. Spray a 9 x 13-inch baking dish with cooking spray; arrange spinach leaves on the bottom of dish. Top with fish fillets. Spoon 3/4 cup of the salsa on fish, cover with foil and bake 12 to 15 minutes, until fish flakes easily with a fork. Place remaining salsa in a shallow dish; cover with plastic wrap and microwave on High 45 seconds, until warm. Serve with fish.

Super Tip. If tropical salsa is not available at your local supermarket, substitute 1 cup of your favorite salsa combined with 8-oz can pineapple tidbits (drained). Try this recipe with sea bass, grouper, flounder, cod, orange roughy or red snapper.
